As families trade summer schedules for busy school routines, weeknight dinners can become one of the biggest challenges.

Veena Crownholm, co-founder of the Millennial Mamas website and blog, has teamed up with Bob Evans to share tips on how busy families can enjoy quick and easy meals, along with details about a back-to-school giveaway.

Crownholm said planning meals ahead of time and keeping convenient, ready-to-heat options in the refrigerator can make busy weeknights easier and give families more time together around the dinner table.

"As a mom of two boys, I know how hectic back-to-school season can be. So one thing that helps my family is planning meals ahead of time and keeping them convenient. Ready to keep options in the refrigerator. It makes those busy weeknights so much easier, and it gives us more time together around the dinner table."

Crownholm said she keeps Bob Evans ready-to-heat sides on hand for her family. One of her go-to recipes is crispy ham, mac and cheese roll-ups.

"What you're going to do is take your Bob Evans macaroni and cheese, and you're going to layer on top of your puff pastry that already has ham on it. You're going to roll it up and then bake it."

Crownholm said she also makes a homemade Dijon mustard sauce to serve alongside the roll-ups.

Bob Evans macaroni and cheese is made with 100% real cheddar cheese and can be ready in less than 10 minutes, Crown Home said. She also recommended bacon macaroni-and-cheese quesadillas as another quick option for school nights.

"They're quick, cheesy, and perfect for those busy school nights."

Crownholm said a little planning can go a long way during back-to-school season.

"Stocking the refrigerator with convenient meal staples, planning a few dinners for the week, and keeping easy recipes on hand can make evenings so much more manageable."

Bob Evans is also helping families with its Back-to-School Giveaway, where 50 families can win kits filled with everyday school essentials, an organizational calendar, and a six-month supply of Bob Evans products.

Families can enter by following Bob Evans Grocery on Instagram or bobevansgrocery.com.
